Vegan Marinara Pizza
This delicious pizza is all tomatoes, no cheese. Top the pies with fresh sliced tomatoes, thinly sliced garlic, extra virgin olive oil, and, if you like, a few chopped black olives or whole capers.
½ recipe Basic Vegan Pizza Dough
½ cup Classic Vegan Tomato Sauce
3 or 4 Roma tomatoes, sliced
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh basil
2 fresh garlic cloves, thinly sliced
Olive oil, for drizzling onto pizza and brushing crust
Salt and freshly ground black pepper, to taste
Makes 8 slices
Preheat oven to 500°F (260°C) for at least 30 minutes before baking your pizza (the pizza stone should be on the lowest rack position in your oven). Dust your pizza peel with flour or corn meal, and set aside.
On a floured surface, roll out dough and shape. Fold dough over once or twice, place on prepared peel, and unfold. Spread tomato sauce on dough, leaving about a ½ inch border. Next, distribute the tomatoes over the sauce, sprinkle with oregano, basil, garlic, salt and pepper, and drizzle evenly with olive oil. Brush sauce-free rim with olive oil.
Carefully transfer your pizza from peel to pizza stone, and bake for 10 minutes, or until the crust is golden brown.
Variations on Vegan Pizza Dough
The pizza dough used for Vegan Marinara Pizza may also be substituted with a herb dough. And why not try some of the following combinations if you want to give your vegan pizza some extra flavors.
Herbed dough: Add 3 tablespoons minced fresh herbs or 1 tablespoon crumbled dried herbs while kneading dough.
Corn meal dough: Substitute 1 cup yellow corn-meal or polenta for an equal amount of flour. Stir cornmeal, flour, and salt together before adding yeast mixture.
Whole-wheat dough: Substitute 1 cup whole-wheat flour for an equal amount of white flour. Stir flours and salt together before adding yeast mixture.
Seeded dough: Add ¼ cup sesame seeds, lightly toasted, or ¼ cup poppy seeds while kneading dough.
Cracked pepper dough: Add 3 tablespoons freshly cracked black pepper while kneading dough.
Sweet dough: Add 2 to 3 tablespoons granulated sugar with flour, reduce salt to ½ teaspoon, and replace olive oil with 2 to 3 tablespoons vegan butter substitute, such as Earth Balance.
